1 c. crabmeat, picked over & flaked (fresh, frozen or canned) 3 tbsp. butter 3 tbsp. flour 1/2 tsp. salt 1/8 tsp. pepper 1/4 tsp. paprika 1 1/2 c. half & half 1/2 c. Cheddar cheese, grated 1 tbsp. Worcestershire sauce 2 tbsp. dry sherry Bread crumbs Parmesan cheese Melt butter in a saucepan. Stir in flour, slat, pepper and paprika. Gradually blend in cream, stirring constantly until sauce is smooth and velvety. Add cheese, Worcestershire sauce and crabmeat. Add sherry. Pour into a buttered casserole or au gratin dish. Top with bread crumbs and Parmesan cheese. Bake at 40 degrees for 15 to 20 minutes until golden brown. Serves 4. |
