CHEESE BAKED HADDOCK
 

3/4 lb. haddock or cod
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. dry mustard
1 c. milk
1/8 lb. processed cheese

Start heating oven to 350 degrees. Place fish in greased 10 x 6 x 2 inch baking dish. Melt butter in saucepan; stir in flour, salt, pepper, and mustard. Add milk gradually; cool, stirring, until thickened. Add cheese; stir until melted. Pour over fish. Bake, uncovered, 25 to 30 minutes or until fish flakes easily with fork but still moist. Makes 2 servings.
