1 c. raw rice, cooked and well drained
1/2 c. minced onion
3 cloves garlic, minced
3 tbsp. butter, melted
2 pkg. (total 20 oz.) frozen broccoli
1 pkg. mixed frozen vegetables (optional)
4 whole eggs
1/2 c. whole milk
1 tsp. salt
1/4 tsp. black pepper
1/2 tsp. dried thyme
1 c. grated Swiss cheese
Grated Cheddar cheese for topping
Cook rice, drain and set aside. Cook broccoli and mixed vegetables according to package directions. Drain and set aside.
Saute onions and garlic in butter until tender, but not brown. Beat eggs. Add salt, pepper, thyme and 1 cup Swiss cheese. Combine this mixture with onion and garlic. Add cooked rice, broccoli and mixed vegetables. Mix well, turn into greased casserole. Top with grated Cheddar cheese. Bake at 350 degrees for 20-25 minutes. Yield: 6 servings.
