QUICKI CURRY
 

1/4 c. butter
1 apple, peeled, cored, and diced
1/2 c. celery, chopped
1/2 c. chopped onion
1 1/2 tsp. curry powder
2 tbsp. flour
1 3/4 c. milk
1/3 c. seedless raisins
1 1/2 tsp. salt
1 1/2 tsp. lemon or lime juice
2 c. cooked, cubed chicken, beef, or lamb
Hot cooked rice

In medium saucepan, melt butter. Add next 4 ingredients and saute 5 minutes over medium heat. Stir in flour. Gradually add milk, stirring constantly. Add raisins, salt, and lemon or lime juice. Bring mixture to boil, stirring frequently. Add meat; reduce heat and cook 7 to 10 minutes more. Serve over cooked rice. Makes 4 to 5 servings - each with 2/3 cup rice.
