1 dressed shad, 3-4 lbs.
Salt & pepper to taste
1 lg. onion, wedged or sliced
1 or 2 slices bacon
Several white potatoes, peeled
Dress shad whole, score, salt and pepper to taste. Place one or two slices of bacon over fish.
Place onion in scores and fasten with toothpicks. Place 2 or 3 pats of butter on fish. Peel several large potatoes and place around the fish. Wrap in heavy aluminum foil and place in shallow pan.
Bake at 250 degrees for 2 1/2 to 3 hours. Turn foil back last 20 minutes to brown fish, at which time you may have to increase heat.
The bones dissolve during this slow cooking process; therefore there is no waste and it is good eating if you like shad.
Serve with spoon bread. Eat while both shad and bread are hot.
