CRABCAKES
 

1 lg. fresh egg
2 tbsp. parsley, can use dried but fresh is better
1/2 c. mayonnaise
1 tbsp. Dijon mustard
1 tbsp. Old Bay Seafood Seasoning

In large bowl, combine all ingredients but be gentle as not to mash crab. Shape into balls about the size of an 8-ball. Carefully flatten to about 1/2 inch thick.

To broil: On buttered cookie sheet, place on lowest rack of broiler (farthest from flame or heat) and cook until just lightly browned, about 4-7 minutes.

To pan fry: Take assembled crabcakes, roll in mixture of 1/2 flour, 1/2 cornmeal. Place in hot skillet with 2-3 tablespoons melted butter. Brown on each side about 2-4 minutes each.

To deep fry: Same as pan fry except drop in deep fat fryer for about 3-5 minutes, drain on paper towels.
