STUFFED BELL PEPPERS
 

1 chopped onion
1/2 lb. sliced mushrooms
1 lb. HOT sausage (for better flavor and interest)
1 pkg. UNCLE BEN'S® wild rice mix, cooked as per pkg. directions
1 c. sour cream
6-7 parboiled bell peppers
1/4 c. chopped walnuts

Brown the onion, sausage, and mushrooms. Drain off fat. Add the wild rice, sour cream, and walnuts. Stuff the parboiled peppers with the above mixture. Dot with butter and parsley. Bake at 350 degrees for 20 minutes. Serves 6.

Even people who do not usually like stuffed peppers will like this recipe!
