BAKED SCROD
 

Fresh Scrod: Rinse, pat dry and cut into serving pieces. Place into a baking dish or pan and cover with topping. Bake at 350 degrees for about 3/4 of an hour or until fish flakes with a fork.

TOPPING: Ritz cracker crumbs (1 roll). Place in a bowl and add about 1 stick of butter (melted). Toss lightly so that consistency is flaky rather than pastry. Add 1 tablespoon of lemon juice. Scatter over scrod and bake. Last 5 minutes add a dash of white wine over pieces.
