3 tbsp. butter
1 lb. fresh scallops
2 tbsp. chopped shallots
1 tbsp. chopped fresh parsley
2 tbsp. chopped fresh chives
1/2 c. coarse bread crumbs
Salt and pepper
Melted butter
Preheat oven to 400 degrees. Heat 3 tablespoons butter in frying pan. When hot. Add scallops and cook 3 minutes over high heat.
Add shallots, parsley and chives; season well with salt and pepper. Cook 2 minutes over medium heat.
Mix well and spoon into individual scallop shells. Sprinkle with bread crumbs and moisten with melted butter. Bake 3 minutes in oven. Serve with lemon. Serves 4.
