CHEESE, BACON AND TOMATO PIE
 

1 9" pie crust
1 med. onion, chopped (about 1/2 c.)
2 tbsp. all-purpose flour
1 med. tomato, thinly sliced
8 slices bacon, crisply fried & crumbled
2 c. shredded mozzarella cheese (about 8 oz.)
2 c. shredded lettuce

Mix onion and flour; sprinkle in pastry-lined pie plate. Top with tomato pieces; sprinkle with bacon and cheese. Bake uncovered in 400 degree oven until cheese is melted, about 25 minutes. Sprinkle with lettuce.
