1-2 lbs ground beef or lamb 2 onions, chopped 1 16 oz can tomatoes 1 1/2 tablespoons sugar 2 tablespoons curry powder 2 tablespoons vinegar salt to taste 2 firm bananas 1 apple, pared and cored, diced 1 tablespoon apricot jam or 4 sliced canned apricots 1/4 cup sliced almonds extra tomato juice (to thin out) Exotically and apricotically tasty. Brown meat and drain and discard excess fat. Add remaining ingredients and simmer gently, stirring frequently, for 30 minutes. Add tomato juice if too thick. Serve over rice. Serves 8. |
