ROASTED ROCK CORNISH HENS
 

2 Rock Cornish Game Hens (defrosted), 22-24 oz. each
Lemon juice
Melted butter
Crushed tarragon leaves (if desired)
Savory Rice Stuffing or Florentine Stuffing (recipes to follow)

Remove giblets; rinse hens and pat dry inside and out. Brush cavities with lemon juice and butter. If desired, rub with tarragon and season with salt and pepper. Stuff each hen with half of Savory Rice Stuffing or Florentine Stuffing.

Tie legs together and tuck wings behind backs. Place hens, breast side up, on rack in shallow roasting pan. Brush surfaces with melted butter. Roast in 375 degree oven for 35-45 minutes, basting occasionally with melted butter or pan drippings. Raise oven temperature to 400 degrees and continue roasting 10 minutes or until legs can be wiggled easily.

MICROWAVE DIRECTIONS: Prepare and stuff hens as directed. Brush all surfaces with diluted browning bouquet. Place hens on sides of microwave roasting rack (backs to center). Brush with melted butter; sprinkle with salt to promote browning. Cover with waxed paper, 8-10 minutes, rotating rack 1/2 turn after 5 minutes. Brush with juice. Cover with foil and let stand 5-10 minutes.
