COUNTRY BARBECUE
 

7-8 lbs. spare ribs
Salt and pepper ribs
1 1/2 c. cider
1/2 c. maple syrup
2/3 c. ketchup
1 tsp. dry mustard
1 clove garlic, minced
1 tsp. paprika
1/2 tsp. Tabasco sauce
1/3 c. orange juice concentrate
1 c. vinegar
2/3 c. soy sauce
1 tsp. salt

Combine cider, maple syrup in small saucepan. Simmer until quantity is reduced by one third. Add remaining ingredients and simmer for 8-10 minutes. Remove from heat. Set aside.

Brown spare ribs on grill turning once. Spoon on a generous amount of barbecue sauce and grill and baste over medium heat for 1 hour. Leftover sauce freezes well. (I have done this in the oven as well.)
