CHEESE-SPINACH PIE
 

1/3 c. chopped onion
1 tbsp. butter
1/4 lb. sliced cheese (Swiss or Meunster)
1 c. cooked, chopped spinach (drained)
3 lg. eggs
1/3 - 1/2 c. milk
1/2 tsp. salt
Dash pepper
9 inch pie shell or thin biscuit dough to fit a 9 inch pie pan

Cook onion in butter until tender; cool. Lay slices of cheese over pie dough, follow with spinach, then onions. Beat eggs, adding enough milk to make one cup. Add seasonings and pour over ingredients in the pie shell. Bake in 400 degree oven about 35 minutes, or until a knife comes out clean. Serve piping hot. (Can be frozen after baking.) Serves four.

Variation: Substitute cooked, chopped broccoli, green beans, zucchini or peas for spinach.
