ORANGE RUFFIE - MICROWAVED
 

1/2 c. slivered almonds
1 1/2 lbs. orange ruffie fillets
1/4 c. chopped parsley
1/4 c. butter
2 tsp. lemon juice
1 tsp. salt
1/4 tsp. pepper
Lemon wedges

Spread slivered almonds in microwavable dish. Microwave (High) 3 to 4 minutes, stirring every minute. Set aside. Rinse fillets; pat dry with paper towel. Arrange single layer of fillets in dish. Tuck under thin end of fillets so fish is uniform thickness. Sprinkle with parsley. Combine butter and lemon juice, pour over fish.

Sprinkle with salt and pepper. Cover with vented plastic wrap. Microwave (High) 3 minutes, rearrange fillets. Recover, microwave for 2-4 minutes. Let stand covered 3 minutes. Sprinkle with almonds. Serve with lemon wedges Serves 4-5.
