Brown chicken breast and drain all but 1/4 cup of oil.
In a blender (or shaker), mix the wine, the remaining oil, and all spices except the parsley.
Combine chicken, onion and above mixture in pan and simmer for 1/2 hour.
Cook rice as directed. Add mushrooms and parsley and cook additional 10 minutes.
Spoon mixture over rice.
