ZUCCHINI FRITATTA
 

2 1/2 c. grated zucchini
1 1/2 c. diced onions
1/2 clove garlic
8 lg. eggs
1 c. grated Parmesan cheese, fresh

Saute zucchini, onions and garlic in small amount of oil. Beat eggs, season with cheese and salt. Add zucchini to egg mixture, a spoonful at a time so the heat of the vegetables will not cook the egg. Put combination into greased 9 x 13 inch or 10 inch round dish. Bake at 350 degrees for 30-40 minutes.
