ITALIAN ZUCCHINI CASSEROLE
 

1 med. zucchini
1/2 c. chopped onion
1 c. low fat cottage cheese
1 1/2 tsp. Italian seasoning
Parmesan cheese

Steam or microwave zucchini until tender. Drain well. Place zucchini and onion in casserole dish (spray with Pam). Blend cottage cheese and seasoning until smooth (may need to add a little skim milk to get cottage cheese blended smoothly. Mix with zucchini. Sprinkle with Parmesan cheese. Bake at 350 degrees for 25 to 30 minutes.
