APPLESAUCE BREAD PUDDING
 

1 (16 oz.) loaf (lite-style white) bread
1 c. raisins
2 tsp. ground cinnamon
2 c. skim milk
1 c. applesauce
8 egg whites or 4 eggs
1/2 c. brown sugar or 12 pkgs. Equal
1 1/2 tsp. vanilla extract

1. Cut sliced bread into 1/2 inch cubes; toss with raisins and cinnamon in a large bowl.

2. Beat together milk, applesauce, egg whites, sugar and vanilla. Pour mixture over bread cubes; let stand 25 minutes.

3. Heat oven to 350 degrees.

4. Spray an 8x8x2 inch baking pan and bake 35-40 minutes or until knife inserted in center comes out clean.

5. Remove from oven and let stand 15-20 minutes.
