MUFFINS
 

2 c. all-purpose flour or 1 3/4 c. whole wheat flour
3 tsp. baking powder
1/4 - 1/2 tsp. salt
2-6 tbsp. sugar
1 egg or 2 egg whites
1 c. milk (skim, low-fat or whole)
1/4 c. vegetable oil
Optional: 1/2 - 1 c. berries or diced fruit

Stir together flour, baking powder, salt and sugar in a mixing bowl. Combine egg, milk and vegetable oil in a small bowl. Stir liquid ingredients into flour mixture just until blended. Fold in fruit. Spoon batter into oiled muffin tins, filling about 2/3 full. Bake at 400 degrees for 15-20 minutes. Makes 8- 12 muffins.
