1 1/4 c. water 2 tbsp. balsamic vinegar 1/3 c. cider vinegar 2 tbsp. lemon juice 2 tsp. white pepper (optional) 2 cloves garlic, minced 1/4 c. chopped parsley 2 1/2 c. mixed vegetables Combine water, vinegar, lemon juice, seasonings, garlic and parsley in large saucepan. Add vegetables. Bring to a boil, cover, simmer 10 to 15 minutes until desired doneness. Remove from heat. Cool to room temperature, cover and chill at least 2-3 hours.
