8 oz. diced beets (optional) 2 oranges, peeled, sliced and quartered 1 lg. jicama, peeled and cubed 3 slices fresh pineapple, cubed 1/2 head iceberg lettuce, shredded 2 bananas, sliced 1/2 c. peanuts, unsalted Seeds from 1 pomegranate 1. In a bowl mix together beets, oranges, jicama and pineapple. Refrigerate to thoroughly chill. 2. Line a salad bowl or platter with the shredded lettuce. |
