1 pkg. white cake mix 1 box pistachio instant pudding mix 1 c. oil (liquid) 1 c. club soda (7-Up, Sprite, etc.) 3 eggs 1/2 c. chopped pecans 3/4 c. shredded coconut Mix all ingredients, except nuts and coconut. After 4 minutes, add nuts and coconut. Pour into greased and floured bundt pan. Bake at 350 degrees about 45 to 50 minutes. Remove from oven after it tests done and cool. After about 15 minutes, remove from pan and cool completely. ICING: 1 1/4 c. milk (skim milk does not work well) 1 lg. Cool Whip 1 box pistachio instant pudding mix 1 container red decorative sugar Beat until it peaks; ice cake and sprinkle with red sugar. Refrigerate. |
