BAKED EGGPLANT
 

1 eggplant, unpeeled and sliced crosswise in 1/2 inch slices
Italian Dressing Mix (an Italian seasoning put out by Schilling)
Garlic
Mayonnaise, any kind
Parmesan or Romano cheese, grated, of course

Place slices of eggplant in a shallow pan; sprinkle each slice with garlic juice to cover. Spread with mayonnaise. Sprinkle with the Italian seasoning. Cover generously with the grated cheese. Bake at 375 degrees for 1/2 hour.
