1/4 c. dry bread crumbs 2 tbsp. grated Parmesan cheese 2 tbsp. salt 2 c. thinly sliced zucchini strips 1 egg, beaten well 2-4 tbsp. cooking oil In shallow bowl or plastic bag, combine bread crumbs, Parmesan cheese, flour and salt; mix well. Dip zucchini strips in egg then in crumb mixture. Fry in hot oil on both sides until golden brown and crispy. |
