FRUIT TRIFLE
 

1 lg. vanilla pudding mix (regular or instant)
Sponge cake or pound cake (mix or ready-made)
1 lb. strawberries, sliced
2 bananas, peeled and sliced
2 kiwi, peeled and sliced
1 (11 oz.) can mandarin oranges
2 c. Cool Whip
1/4 to 1/2 c. rum

Make pudding according to package directions. Chill 1 hour (if not instant). Slice cake into 1/2 inch slices. Brush lightly with rum (optional). Arrange half of cake slices in single layer in trifle or glass bowl. Arrange fruit artfully around sides and in center. Pour half of pudding on top. Place half of whipped cream over. Repeat layer. Top with fresh fruit and mint sprigs.
