FRUIT GLAZED PIE
 

1 (3 oz.) pkg. Jello (lemon)
3 tbsp. sugar
1 c. boiling water
1 (11 oz.) can mandarin orange sections
1 pkg. Whip and Chill lemon dessert mix
1/2 tsp. grated lemon rind
1 baked 9 inch pie shell, cooled

Dissolve Jello and sugar in boiling water - drain orange sections, measuring syrup and add water to syrup to make 1 cup. Add to Jello - mix Whip and Chill according to package directions - set aside 1 cup Jello - add remaining Jello and rind to dessert mix. Pour into pie shell. Chill for 20 minutes. Top with orange sections. Spoon reserved Jello over pie. Chill 3 hours or more. Garnish with fresh mint.
