1 tbsp. plus 1 1/2 tsp. uncooked pearl tapioca Dash of salt 1/2 c. water 1/2 c. orange juice, no sugar added 1/3 c. pineapple juice, no sugar added 1 c. strawberries, cut into halved 2 med. peaches, blanched, peeled, pitted, and sliced 2 sm. oranges, peeled and sectioned 2 sm. apples, cored, pared, and diced 1/8 med. pineapple, pared and diced In small saucepan combine tapioca and salt; add water and bring to a boil. Reduce heat to medium-low and let simmer, stirring frequently, until tapioca turns clear, 10-15 minutes. Add orange juice and pineapple juice and stir to combine; remove from heat and set aside. In medium bowl, combine strawberries, peaches, oranges, apples, and pineapple; pour tapioca mixture over fruits and mix well. Cover with plastic wrap and refrigerate until chilled, at least 1 hour. |
