FRUIT KUCHEN
 

1/2 c. butter
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/3 c. milk
2 cans ready-mix pie filling (cherry, apple, blueberry, peach, etc.)

Cream together butter and sugar. Add eggs and vanilla. Beat well. Sift together flour, baking powder and salt. Add dry ingredients to first mixture. Add milk and mix well (batter will be thick). Spread batter into an 11" x 17" well greased jelly roll pan. Spread pie filling over batter. Bake at 350 degrees for 45 minutes. Drizzle with thin frosting made from 1 tablespoon melted butter, 1 cup confectioners sugar and 1/4 teaspoon vanilla. Use enough milk to make spreading consistency. Beat well.

May make each half of cake with a different kind of fruit. Frosting may be drizzled on warm kuchen in cross-hatch designs. Cut into 2 1/2" squares. Makes about 35 servings.
