FRUIT AMBROSIA
 

AMBROSIA:

1/2 c. orange juice
1/4 c. honey
1 tbsp. lemon juice

FRUIT:

3 kiwi fruit, peeled & sliced
1 (20 oz.) can pineapple chunks in juice
2 (11 oz.) cans mandarin oranges
1 1/2 c. red seedless grapes
Other optional fruit, such as sliced nectarines, peaches, apples (peeled or unpeeled); sliced bananas; halved strawberries; melon balls or chunks

Note: Select fruits with color in mind, as well as flavor. Stay away from blueberries, they'll color everything with an unappetizing bluish tinge!

TOPPING:

Shredded coconut

Reserve the pineapple juice in a small bowl. In a large bowl, mix together the pineapple chunks and all other fruit. Add orange juice, honey and lemon juice to the pineapple juice and stir to mix. Pour juice mixture over fruit in the large bowl and stir so all the fruit gets coated with juice (this will prevent the apples and bananas from changing color).

Cover and chill in refrigerator at least 1 hour. Serve the coconut separately as a topping so it doesn't get soggy. This can be made the night before and is a perfect light dessert for a barbecue or picnic.

Serves 6-8.
