HUNGARIAN GOULASH SOUP
 

1 lb. chuck, cut into cubes
2 lg. onions, diced
1/2 med. green pepper, diced
3 med. potatoes, cubed
2 med. carrots, sliced
1/2 tsp. caraway seeds
2 tbsp. paprika
Salt to taste
Enough water to cover meat (about 3 c.)
1 med. can crushed tomatoes (2 c.)

Saute onion in 3 tablespoons olive oil. Do not brown. Cook until soft. Add meat, paprika, salt, pepper, tomato, green pepper, caraway seeds, water. Simmer until almost tender. Add carrots. When carrots are nearly tender, add potatoes, cook until tender.
