NORWEGIAN FLAT BREAD
 

1 1/2 c. whole wheat flour
1/2 c. sugar
1/2 c. softened butter
1 c. boiling water
4 - 4 1/2 c. flour
1 c. buttermilk
2 tsp. baking powder
1 1/2 tsp. salt
1 tsp. baking soda

In large bowl, combine whole wheat flour, sugar, butter and water. Let stand until cool. Stir in remaining ingredients, using enough flour to make dough easy to handle. Turn dough onto floured surface, knead until thoroughly mixed. Divide dough in half; shape each half into a 12" x 2 1/2" roll. Cut each roll into 12 portions. Roll out each portion on floured surface to 1/8" thick. Flat breads will be irregular in shape. Place on ungreased cookie sheets. Bake at 400 degrees for 10 to 13 minutes or until golden brown. Yield: 2 dozen.
