1 c. sliced mushrooms 1/2 tsp. salt 1/4 tsp. pepper 2 tbsp. olive oil 1 c. soy milk 1/2 c. Parmesan cheese 1 c. ricotta cheese 3 c. cooked spinach fettuccine In a large saucepan, saute the mushrooms, salt, and pepper in oil over medium-high heat for 35- minutes. Toss in the remaining ingredients, adding the noodles last. Combine, and warm through. |
