FRESH FRENCH STRAWBERRY PIE
 

9 inch baked pie shell
3 oz. pkg. cream cheese
1/2 c. confectionery sugar
1 tsp. vanilla
2 c. heavy whipping cream
1 qt. fresh strawberries
3/4 c. sugar
2 tbsp. cornstarch
1/2 c. water
Few drops red food coloring

Combine cream cheese, powdered sugar and vanilla. Beat until well blended. Whip cream and fold into mixture. Spread cream and fold into mixture. Spread above on bottom of pie shell. Clean berries. Put half of the amount over mixture in pie shell. Cut remaining strawberries in half. Combine sugar, cornstarch and water, stirring well until blended. Add remaining berries to cornstarch mixture until thick; stir constantly. Add food coloring; mix well. Pour over berries in pie shell. Chill. Decorate with whipped cream and fresh strawberries.
