1/4 c. each black beans, navy beans, kidney beans, garbanzo beans, pinto beans, baby lima beans, lentils, split peas, barley, black eyed peas 1 tbsp. salt Water 6 ribs chopped celery Ham hock 6 bay leaves 1 lg. bell pepper, chopped 2 tbsp. parsley Salt 1/2 tsp. thyme 1 qt. tomatoes 2 med. onions, chopped 2 cloves garlic, minced 1 lb. smoked sausage 1/2 frying chicken Cayenne pepper to taste Wash and drain beans and peas. Add water to cover with 1 tablespoon salt. Soak overnight. Drain and add: 3 quarts water and ham hock, bay leaves, and thyme. Cover and simmer 3 hours. Add tomatoes, onion, garlic, celery, bell pepper, salt, and cayenne pepper to taste. Simmer, uncovered, 1 1/2 hours. Add 1 pound smoked sausage and 1/2 chicken. Simmer until done. Remove chicken, bone, and cut into small pieces. Return to soup. 10 minutes before serving, add 2 tablespoons parsley. |
