FRENCH ONION BEEF AU JUS
 

3 lbs. fresh beef brisket
1/3 c. soy sauce
1 tsp. browning sauce
1 1/4 oz. pkg. onion soup mix
5 c. water
6 red potatoes, halved
6 carrots, scraped & halved

Preheat oven to 350 degrees. Combine soy sauce, browning sauce and onion soup mix until smooth. Add water. Place brisket in 3 1/2 to 4 quart baking casserole or Dutch oven; pour soy sauce mixture over beef. Cover tightly and cook at 350 degrees for 2 hours. Add carrots and potatoes. Continue cooking covered for 1 hour.

Remove brisket from cooking liquid and let stand 20 minutes before carving. Carve across grain into thin slices. Return slices to cooking liquid and refrigerate 1 hour or overnight. Reheat at 350 degrees when ready to eat. Serves 6.
