ITALIAN SPINACH SAUSAGE PIE
 

1 lb. sweet sausage
2 (10 oz. pkg.) frozen chopped spinach, thawed
1/2 lb. ricotta
1/2 tsp. salt
1/8 tsp. pepper
6 eggs
1 lb. mozzarella
1/8 tsp. garlic powder
2 pie crusts

Remove sausage from casing and brown; drain well. Save 1 egg yolk for pie crust. Beat eggs until mixed; drain spinach well. Mix spinach, eggs, ricotta, mozzarella and spices. Add sausage. Place in pie crust lined shell, top with pie crust. Brush with egg yolk mixed with 1 tablespoon water. Bake 1 hour and 15 minutes at 375 degrees. Let stand 10 minutes. This is an excellent meal. First time I served it my children looked at it and said, YUK, but after tasting it, screamed for seconds.
