2 lbs. fillet mignon 3 slices bacon 1 onion, sliced 1/4 c. butter, melted 1/2 c. dry sherry Salt and pepper to taste Fry bacon for 1 minute. Add onions and saute until golden brown. Remove bacon and onion from fry pan. Brown meat on all sides over high heat. Reduce heat and cook for 5 minutes. Add melted butter and sherry and cook for another two minutes or until meat is cooked. Do not over cook meat. Serve with bacon and onions. Serves 6. |
