GERMAN APPLE PANCAKES
 

FRUIT MIXTURE:

1 lg. green apple, halved, cored and sliced
1/4 c. sugar
1/4 c. applesauce
1/8 tsp. nutmeg
1/2 tsp. cinnamon

BATTER INGREDIENTS:

8 egg whites (egg substitute equal to 4 eggs)
1/4 c. self-rising flour
1/2 c. oat bran cereal
1 tsp. baking powder
1 tbsp. sugar
1 c. nonfat milk
1 tsp. vanilla
1 tbsp. vegetable oil
1/8 tsp. nutmeg

Double recipe for 9x13 inch pan.

Spray pan with Pam. Mix fruit mixture and spread in dish. Bake at 425 degrees for 10 minutes. Mix liquid ingredients for batter, add dry ingredients. Stir only until ingredients are mixed. Pour batter over fruit and bake at 375 degrees for 20 minutes.

This serves 2 substantial appetites or 4 normal ones. Increase ingredients as needed for more people.
