1/4 c. bread crumbs
2 tbsp. grated Parmesan cheese
1 1/2 tbsp. lemon juice
1 1/2 tbsp. oil
4 fillets (cod, haddock or orange roughy)
Preheat oven to 450 degrees. Stir together crumbs, cheese, lemon juice and oil. Set aside.
Spray baking dish with non-stick spray. Arrange fillets in baking dish. (Fold thin edges under to even out thickness of fish.) Spread crumb mixture evenly over fish. Bake 15-18 minutes or until done, when fish flakes easily.
