BAKED FISH IN DILLED CHEESE SAUCE
 

Fillets of moist, white fish bake with delicate flavor in a creamy cheese sauce in just 20 minutes. Accompany the main dish with a favorite green vegetables and tiny new potatoes steamed in their jackets.

For 4 servings you will need: 3 tbsp. butter 3 tbsp. all-purpose flour 1 tsp. salt 1/2 tsp. dry mustard 1/4 tsp. dried dill weed Dash cayenne 1 1/2 c. half and half 1 1/2 c. shredded Cheddar cheese 1 can (4 oz.) sm. cooked shrimp

Cut fish fillets into serving pieces. Arrange in a single layer in greased 2 quart baking dish.

In 2 quart saucepan, melt butter. Stir in flour and cook until bubbly. Add salt, dry mustard, dill and cayenne. Remove from heat and gradually stir in half and half.

Return to heat and cook, stirring constantly, until thickened. Mix in 1 cup of the cheese, stirring until melted. Mix in shrimp.

Pour cheese sauce evenly over fish. Sprinkle with remaining cheese.

Bake at 400 degrees about 20 minutes or until top browns and fish flakes evenly when tested with a fork in thickest part.

For 8 servings: Double the ingredients.
