BAKED FISH FILLETS
 

4 fillets of fresh sole, haddock, flounder, walleye or perch (3/4 lb. for every 2 people)
1 egg, lightly beaten
2/3 c. bread crumbs (brown in oven)
1/2 c. butter
Pepper and salt

Preheat oven to 400 degrees. Season fillets with pepper (and salt, if desired) and dip in egg; coat with bread crumbs. Put butter (butter) in 10" x 6" x 1 1/2" baking pan. Place pan in preheated oven until butter is melted and browned. Dip fillets in butter, coating them on both sides and arrange in pan. Bake in preheated oven for 15 to 25 minutes or until fish flakes easily, basting frequently with butter. Remove pan; continue to baste until all butter is absorbed.
