OVEN-BAKED CATFISH
 

1/4 c. cornmeal
1/4 c. dry bread crumbs
1 tbsp. fresh thyme, chopped
4 catfish fillets
1/2 c. skim milk
1/4 c. tub butter, melted
1/4 tsp. salt (optional)

Preheat the oven to 450 degrees. Spray a shallow roasting pan with vegetable pan spray. Mix the cornmeal, bread crumbs, salt and thyme together. Dip the fish into the milk, then roll in the dry mixture. Place fillets in the roasting pan. Pour the butter over the fish and bake, uncovered, until the fish flakes, 15 to 18 minutes.
