CARP PUFFS
 

1 1/2 c. mashed potatoes (leftover)
2 eggs (beaten)
1/2 tsp. salt
1/2 tsp. lemon pepper
1/2 tsp. black pepper
2 tbsp. minced onion
1 c. canned carp (boned and flaked)

Put all ingredients except carp in mixing bowl, beat until thoroughly blended. Stir in flaked carp. Using tablespoon drop into 375 degree oil. Turn frequently and cook until golden brown. Drain on rack and paper towels.
