Peel egg plant and cut like French fried potatoes. 1 c. milk 1/4 tsp. pepper 1 egg 1 1/2 tsp. salt 1 1/2 c. dry bread crumbs

Beat eggs, milk, salt and pepper together. Dip egg plant in this and roll in fine bread crumbs. Fry in deep fat as for French fried potatoes.
