BROILED MACKEREL WITH MUSTARD SAUCE
 

2 lg. or 4 sm. mackerel (about 3 lb.)
1/4 c. melted butter
1/2 tsp. paprika
1/2 tsp. salt
2 tsp. prepared mustard (Guldens is best)
juice of 1/2 lemon (or reconstituted lemon juice)
1/8 tsp. pepper

Put fish on a greased broiler rack. Make sure to clean the fish before you put it on the rack. Remove head and tail and inners. Combine the remaining ingredients and brush on fish. Broil under medium heat for 8 to 12 minutes, brushing with sauce several times. Have some sauce left over so you can put it on when you eat the fish. With the high price of fish these days it is nice to know a good flavorful sauce to put on a lowpriced fish.
