ROCKY MOUNTAIN BRISKET WITH BBQ SAUCE
 

2 tsp. salt
2 tsp. pepper
2 tbsp. chili powder
1 tsp. bay leaves, crushed
2 tbsp. liquid smoke
5 lbs. beef brisket

BBQ SAUCE:

3 tbsp. brown sugar
1 (14 oz.) catsup
1/2 c. water
2 tbsp. liquid smoke
Salt & pepper to taste
4 tbsp. Worcestershire sauce
3 tsp. dry mustard
2 tsp. celery seed
6 tbsp. butter
1/4 tsp. cayenne pepper

Combine salt, pepper, chili powder, and bay leaves. Rub meat completely with liquid smoke. Place meat, fat side up, in a large roasting pan. Sprinkle dry seasoning mixture on top. Cover tightly. Bake 4 hours at 325 degrees. Scrape seasoning off meat and cut very thin slices across the grain. Serve with BBQ sauce. Combine all ingredients. Bring to a boil, stirring occasionally. Cook for 10 minutes. Serve with sliced brisket.
