ROCKY MOUNTAIN BRISKET WITH BARBECUE
SAUCE
 

4 lb. beef brisket
1 1/2 tsp. salt
1 1/2 tsp. pepper
2 tbsp. chili powder
1 tsp. crushed bay leaves
2 tbsp. Liquid Smoke

Combine salt, pepper, chili powder and bay leaves. Rub meat completely with Liquid Smoke. Place meat, fat side up, in roasting pan. Sprinkle dry seasoning mixture on top. Cover tightly. Bake 4 hours at 325 degrees. Add a small amount of water in pan. Scrape seasoning off when cooking is complete and cut into very thin slices across the grain. Serve with barbecue sauce.
