FRANCES' GRAHAM - NUT CRUST AND
CHEESECAKE
 

1 3/4 c. fine graham crumbs
1/4 c. finely chopped walnuts
1/2 tsp. cinnamon
1/2 c. melted butter

FILLING:

3 well beaten eggs
2 (8 oz.) pkg. cream cheese, softened
1 c. sugar
1/4 tsp. salt
2 tsp. vanilla
1/2 tsp. almond extract
3 c. sour cream

Crust: Combine above ingredients. Reserve 3 tablespoons for top of cheese cake. Press remainder on bottom and 2 1/2 inches up on side of spring form cake pan. Pour cheese cake mixture on top of crumb crust and bake per instructions for cheese cake recipe.

Filling: Combine eggs, cheese, sugar, salt and extracts. Beat until smooth. Blend in sour cream. Pour into graham nut crust. Trim top with reserved crumbs. Bake at 375 degrees for 35 minutes or until just set. Cool. Chill well about 4-5 hours. Filling will be soft. Makes about 10 servings.
