CHOCOLATE TURTLE CHEESECAKE
 

2 c. vanilla wafer crumbs
6 tbsp. butter, melted
14 oz. caramels
1 c. chopped pecans
1 (5 oz.) can evaporated milk
2 (8 oz.) pkg. cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
2 eggs
1/2 c. semi-sweet chocolate, melted

Mix vanilla wafer crumbs and melted butter, press into bottom of 8 inch springform pan. In saucepan, melt caramels with milk over low heat. Pour over crust. Top with pecans.

Combine cream cheese, sugar and vanilla. Mix until smooth. Add eggs, one at a time. Mix well after each addition. Blend in melted chocolate. Pour over pecans. Bake at 350 degrees for 40 minutes. Loosen rim of pan. Let it cool completely before removing rim. Garnish with Cool Whip, nuts or chocolate curls.
